2 tbsp. butter, melted
2 ½ tbsp. flour
2 cups milk
½ tsp. salt
1/8 tsp. pepper
1 cup shredded cheddar cheese (or more to taste)
Melt butter over medium heat. Blend in flour to make
a roux and cook 1 minute. Add milk ¼ cup at
a time, stirring constantly. Add salt, pepper, and
cheese, stirring until cheese melts and mixture is
smooth. Makes about 2 ½ cups.
Great for pouring over broccoli!
