2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground ginger
1 teaspoon cinnamon
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
1/4 cup brown sugar
1 large egg
2/3 cup unsulfured molasses
2/3 cup milk
Preheat oven to 350 degrees. Grease and flour a 9
x 5 inch loaf pan. In a bowl, measure the flour, baking
powder, baking soda, salt, ginger, and cinnamon; set
aside. In a mixing bowl, beat the butter and sugars
until light and fluffy on medium speed. Beat in the
egg and continue beating until combined. Combine the
molasses and milk in a small bowl. Remove the butter
mixture from the mixer. Alternate adding the flour
and milk mixtures to the butter mixture. Fold the
batter together with a rubber spatula.
Pour the batter into your prepared loaf pan.
Bake in 350 degree oven for approximately 50 minutes
or until done. Let cool. Remove bread from pan and
wrap for a later date or serve hot. Enjoy!
Makes: 1 loaf.
