Spanish Rice
1 1/3 cup lard or oil
1 onion, minced
2 cups rice
3 cups meat broth
2 cups tomato juice
Heat the fat. Add the onion, and cook slightly.
Add the rice and stir until each grain is coated with
oil and slightly browned. Add the broth and tomato
juice, salt and pepper to taste, and simmer until
liquid is absorbed.
