1-1/2 lb sirloin steak
1/2 tsp dry mustard
1/4 tsp salt
1/8 tsp ground pepper
1 Tbl chopped chives
1 Tbl lemon juice
1 tsp Worcestershire sauce
3 Tbl heated cognac
2 Tbl olive oil
Preheat the oil 5 minutes at 375 degrees.
Meanwhile, wipe 1/2-inch thick steak with paper towels
to remove excess moisture. Mix dry mustard, salt and
pepper. Sprinkle over one side of the steak and rub
in.
Brown the steak in hot oil, about 1-1/2 minutes on
each side. Sprinkle with chives, lemon juice and Worcestershire
sauce. At table side, pour the heated cognac over
the steak and ignite. When the flame goes out, transfer
the steak to a serving platter. Spoon pan juices over
the meat and serve.
