1 recipe of Mom's
pie crust
1-1/2 qt strawberries, washed & hulled
1 cup sugar
3 Tbl cornstarch
1/2 cup water
1 Tbl lemon juice
Crush enough strawberries to make 1 cup (blender
works well). In a saucepan combine the sugar and cornstarch.
Add the crushed berries and water; cook over medium
heat until the mixture boils and thickens, stirring
constantly. Blend in the lemon juice. Cool.
Add the remaining whole or sliced berries to glace
mixture and toss lightly, just to coat the berries.
Arrange the berries in the pie shell. Chill.
Serve with whipped cream.
