1 ½ lb lean pork cut in 2 x ½ inch
strips
1 can (No. 2) pineapple chunks
¼ cup brown sugar
2 teaspoons cornstarch
1/4 cup vinegar
2-3 teaspoons soy sauce
½ teaspoon salt
¼ cup onion – thinly sliced
1 small green pepper – cut in strips
• Brown pork in a small amount of fat. Add ½
cup water and simmer until tender (about one hour).
• Drain pineapple, saving the juice. Combine
sugar and corn starch, then add pineapple juice, vinegar,
soy sauce, and salt.
• Add the above mixture to the pork. Stir and
cook until sauce thickens.
• Add pineapple, onion and pepper and cook
2-3 minutes. Serve over rice with soy sauce.
