500 g/ 1 lb. Ground Beef
1 tin (435g) Refried Beans
8 Tortillas
2 cups Pepper Jack, grated
2 cups Mild Cheddar, grated
Beef stock cubes, crushed
1 t Onion powder
1 t Garlic powder
1 t Cumin
Chilli powder or crushed chillies to taste
Water if needed.

Set oven to 325F 180 C.
Grate and mix cheeses.
In a frying pan brown the meat and add crushed stock
cubes, onion, garlic, cumin and chilli. Drain off
fat and add the can of refried beans. Stir until well
mixed, adding water if needed.
Place 1/8 meat/bean mixture in a tortilla along with
¼ c cheese mixture. Roll up and place in a
9x13 pan, repeat until all tortillas, meat mixture
have been used. Cover the top with any remaining cheese
mixture. Bake for 15 minutes at 325 or until cheese
is melted.
Serve with Salad, enchilada sauce, guacamole and
salsa.
